As of Ubuntu 20.10, go to Activities overview (the button with 9 dots on the bottom left corner and type “Keyboard”.
In the first section of the dialog, add all languages. The first language in the list will be the one loaded by default. The order in the list is relevant.
Super key is what is is commonly known as Windows key.
Press Super + Space keys to change to the next the keyboard language on the list.
Alternatively, you can change the language using the GUI in the system tray on the top right corner.
